Thou shall not bake with eggs

My experience with eggless cake hasn’t been a rip roaring success, something always goes wrong;

  • The cake doesn’t rise
  • There is the bitter aftertaste of the bicarbonate that some of the recipes use
  • Just tastes awful, no accompaniment of icing, ice cream can save it

I’ve tried this eggless vanilla cake recipe from Sharmis Passions with some success, I remember it wasn’t very tall but looked like a sponge cake, needed a bit more sugar if you didn’t add any icing.

I’ve have tried this teen tiny eggless chocolate cake recipe from Cake Merchant before and the first time I made it the cake turned out perfect, it used to be my go to recipe.

Lately I’ve not been having much success with it.

It either comes out with the bicarbonate aftertaste or the cake is stodgy that it glues itself to your mouth. Am I using too much liquid, not mixing enough? Answers on a post card.

Why you are asking am I going to all this trouble to find a successful eggless cake recipe when I can knock up a decent cake with eggs? These days not everyone eats eggs due to allergies, religion become a vegan. Some of you know I have a regular biscuit stall at Kingswood Primary school fete, to be on the safe side I avoid baking anything that contains nuts and have a mixture of biscuits that both contain egg and are eggless. No parents have ever asked my if the biscuits contain egg but I just like to have a mixture just in case.

Back to my perfect eggless cake recipe quest

Eggless CakeI had some ripe banana’s and no eggs, found this vegan banana cake recipe from the Viveka Gardens which was adapted from a BBC Good Food recipe, I was pleasantly surprised.  Even people who don’t usually like banana cake liked this one.
This recipe gave me hope that I could produce something that not only is eggless but also edible!

 

Eggless Chocolate CakeFollowing my success with this the banana cake I had renewed faith that I was getting closer to finding a go to recipe. I have discovered this chocolate cake recipe from BBC Good Food. I forgot to add the 3 tablespoon of water to the glaze and it was a disaster. I then made a normal thin chocolate icing and that worked out fine. I made some holes in the cake so the icing drizzled through. This recipe was more like a brownie cake, and tasted nice with ice cream. My only criticism would be that it needed more sugar. With some tweaking this could become my go to eggless chocolate recipe.

Below is the recipe if you want to have a go, let me know what you thought of it.

Ingredients

  • 85g Butter, plus extra for greasing
  • 2 tbsp Golden Syrup
  • 1 tbsp Vanilla Extract
  • 300g Self Raising Flour
  • 100g Caster Sugar
  • 25g Cocoa Powder
  • 1 tsp Bicarbonate of Soda

Chocolate glaze

  • 100g Dark Chocolate, broken into pieces
  • 3 tbsp Golden Syrup

Method

  1. Heat oven to 160C/ fan 140C/ gas 3 and grease a 20cm round cake tin
  2. Tip the butter, syrup and vanilla into a heatproof jug, add 300 ml boiling water and briefly whisk with a fork to combine
  3. Sift the flour, sugar, cocoa and bicarbonate of soda into a large bowl, then in tip in the butter mixture. Stir until you have a smooth batter, then scrape into prepared tin. bake for 50 – 55 mins until the cake is well risen and springy to touch. Cool in tin for around 15 mins before turning out to cool on a wire rack.
  4. To make glaze, put chocolate and syrup into a small glass bowl with 3 tbsp of water, and microwave for 30secs on high until melted and smooth. leave to cool, then pour over the cake before serving.

Weekend: Mehndi & Exhibitions

20140816_172225[1]My housemate took some pictures of me in my outfit. I’ve said this time and time again, I’m not photogenic and have a squinty left eye thing going on in many of my pictures. I’ve been working on these and have been told to work on my ‘angles’ hence a large number of photos were taken before we managed to find a decent a one! We are also going to need to work on choosing the right backgrounds!

I think I’m getting there with the squinty eye thing but according to Tyra Banks on America’s next top model it is also important to show case the neck. IMG_20140816_201230[1]So need to work on showing my neck so I don’t look like my head is just glued to my shoulders’ avoid the squinty left eye and not look like a meercat at the same time! It’s a lot less effort to shy away from the camera!

The mehndi was ok, there was music but no dancing and my left knee has been playing up a bit lately there was no was no way I was going to be busting a move anyway.

To entertain ourselves my sister and eye started taking a few cheeky pictures as well as some nice ones. My sister was the one closest to our mum so she copped most of the telling off! I would put the cheeky pictures on here but have not been given permission by my sister!

Exhibitions

Monday I had a day trip in London with my youngest two siblings. We visited a comic book and a wedding dress exhibition. One was at the British Library the other at the V & A.

Both were quite interesting, we weren’t allowed to take pictures at exhibition. They were both interesting, the comic books gave a history as to how they began and have been used as political propaganda and to influence readers thoughts to where they are today with the likes of Batman.

The wedding dress exhibition showcased some interesting garments from throughout history, some outfits were considered fashionable for the time but today could be deemed unflattering.

We didn’t spend much visiting all the sections this time, it was getting the point where energy levels were fading and patience with the hordes of other visitors were wearing thin.IMG_20140818_164330[1] It didn’t help I was trying to refrain from coughing my lungs out, no one likes to be near a cougher polluting the seemingly ‘unpolluted’ London air.

We made it home where I crashed on the sofa with a well-deserved mug of tea.IMG_20140819_202240[1]

One of my housemates got the baking bug this week, plus she has some over riped bananas to dispose of. Hence the emergence of banana and chocolate chip bread! Although the recipe was there in front of her she couldn’t be bothered to weigh anything so guestimated much of the ingrediants. Not bad for a guestimation.

Is this week over yet?

Though not the worst, it also hasn’t been the best week.

The first kickboxing class of the week, in my opinion, was cr@p. Just when I feel I’m improving, a break from classes here and there has led to me digressing. It could be where the instructor is pushing me to improve by picking out where I’m going wrong, though it felt like most of what I was doing was wrong.

I bought a nice high waisted pencil skirt in a size I am usually comfortable in. It’s fine as long as I don’t stand sideways, eat or breathe! I’m hoping that the bloated look I had going on is just water retention, I’m no good with any form of dieting. My last attempt at a ‘lifestyle’ change lasted about a week.

To add to the mix, I’ve been having spot break outs to the extent I feel like I could be a poster girl for an acne product, this shouldn’t happen to someone of my age, but alas it has. All I can say is thank goodness for concealor!

I know these are not considered ‘real’ problems to complain about and there are many others who have ‘proper’ reasons to feel a bit cr@p, but let me have this one.

It may not sound like it but there were some positives to this week.

Fortunately the second kickboxing lesson of the week was slightly better. I wasn’t in the best of moods to begin with, that most likely helped with the aggression side. A few difficult moves and spinning kicks thrown in, bit dizzy by the end but worked up a disgustingly good sweat. To top it off I was home in time to watch ‘2 Broke Girls’.

20140625_BananaNutella[1]Thanks to some over ripe banana’s my kitchen was smelling of eau de banana, what else could I do but make muffins with them. I found this quick and easy banana and Nutella recipe. Despite me not ‘swirling’ the Nutella enough the muffins were a hit and with the fruit content surely should count as one of my five a day. 😉

In case you didn’t know (where have you been) I also have a working shed which hopefully I will start filling up this weekend.

Next week, I’m hoping it will be a bloated, acne free one and I’ll just overall be in a better mood. 🙂
